Issue Title: CAEP spec has subject in the examples <br>

The event schemas in the CAEP spec make no mention of a `subject` claim. However, `subject` appears in all of the normative examples. We should consider removing `subject` from the examples now that the `sub_id` (at the SET level) is the proper way to communicate

 subject info.
