Plenty of sites do both. JanRain has particular expertise in doing so.
Fwiw, I am fully supportive if OpenID (Facebook is the largest openid relying party). I am hopeful that both Oauth and OpenID can evolve to interoperate more cleanly.

I think our priority is Facebook Connect then possibly OpenID in some way. Should I just head over to the Facebook Connect documentation and follow that, or do I need to do anything special in order to be able to implement OpenID later (without any major migration problems)?

If you want OAuth 2.0 the new version with the Graph API is what you want.
On the other hand the old version is much more widely deployed at this point.
It is likely that a open protocol on top of OAuth for identity will emerge that will work with Facebook.
However at this point you will need to implement both protocols.
A big difference will be in how you deal with the user identifiers.
If you want FBML and other facebookish things on your site you will need to implement there protocol.
