This, and similar, statistics should be readily available to large 
providers.
They have log files that could be used to count usage and they also 
know how
many OpenIDs they have issued.

But whether they would be willing to part with that information is 
another
question entirely.  I doubt very much that they will let you see the raw
log files, but they might be willing to give you the ratios you're 
seeking.
I reckon you'll have to ask them.

Another statistic that I think would be of interest is what percentage 
of
a large provider's OpenIDs are used only for authenticating to that
provider's services.  For instance, if AOL OpenIDs were only used at AOL
sites, then all that's really happened is that AOL has deployed a 
different
authentication scheme for its sites.
