[OpenID-Specs-eKYC-IDA] Just a bit more housekeeping

Inspired by Torsten’s point about keeping the document history up to date I would also propose that Peter and Sascha are added to the Acknowledgements section. If somebody is doing some edits it would be good to get their names added.
It also seems to me that removing “Mark Haine” from the Acknowledgements would make sense as I am one of the co-authors.
